Perlita caviar is made from Siberian sturgeon (grain size: 2.6 mm). It is a sweet caviar that is distinguished by a very nice length in the mouth.
L’Esturgeonnière farm in Aquitaine (south-western France) has been awarded the Living Heritage Company label, which rewards traditional know-how.
Perlita caviar is available in 100 g tins.

The caviar is served on blinis, with a little cream or on slices of steamed potato on which you place a little caviar and a little fresh cream (see photo in our recipe section).
