The Espelette PDO pepper is the only spice labeled in France. It is PDO (Protected Designation of Origin).
Harvested from August to November, the peppers are carefully selected and harvested by hand, then naturally dried for at least 15 days in the open air. It is then put in the oven for several hours and ground into a powder.
Espelette pepper is an excellent substitute for pepper. Long in the mouth, it sublimates the daily cooking as well as all the most delicate dishes.
Advice for use : it is recommended to season the dishes with Espelette pepper at the end of cooking to preserve all its flavours.
