Black, green and white peppers are traditionally cultivated in the forests of Madagascar. Harvested green, it is exposed to the sun for several days which concentrates its aromas and then turns black.

The black pepper is a powerful pepper, the green pepper has a very fresh and not very pungent vegetable flavor, the white pepper gives fresh, vegetable and floral notes with a mentholated dominant.
