Dried Duck Breast with Wild Pepper Voatsiperifery

Ingredients (for 8 people):

– 1 large duck breast (minimum 350 g) – 1 kg of coarse sea salt – a few sprigs of fresh thyme wild pepper from Voatsiperifery

Preparation of the recipe: rest: 24 h, then 3 weeks

Place a good layer of coarse salt in the bottom of an airtight container slightly larger than the duck breast. Place the duck breast on top and cover with salt. Close the container and put it in the bottom of the refrigerator for 24 hours. After this time, remove the duck breast from the salt. Rinse it under cold water and dry it well with paper towels.

Place the duck breast on a clean cloth and pepper it generously with wild pepper on all sides and even under the skin. Wrap it in the cloth and put it back in the bottom of the refrigerator for 3 weeks.

After this time, the duck breast has decreased in volume and is dry as a ham. Cut into thin slices for an aperitif or on a green salad.
