Duck Breast with Vanilla

Ingredients for 6 people:

– 3 duck breasts detailed in pieces

– 2 tomatoes cut into medium cubes

– 6 cloves of garlic

– 2 large onions, chopped, 6 cloves, 1 tbsp. turmeric, 2 sprigs of thyme, salt, 10 peppercorns, 2 beautiful vanilla pods split in two

Mash together the garlic, peppercorns and salt to make a paste.

Brown the duck pieces in a pot. Do not add oil. Brown the pieces well on each side. Empty the fat from the duck and put the pieces back. Add the chopped onions, thyme, half of the turmeric, stir well then add the crushed mixture, cloves and tomatoes.

Stew the tomatoes, add the vanilla pods, mix again and cover with water to the level of the pieces. Cover the pot.

Cook for 45 minutes to 1 hour, covered.

Add the remaining turmeric, mix and cook uncovered for 15 to 20 minutes. The sauce should be smooth.
