Perlita caviar is made from Siberian sturgeon (grain size: 2.6 mm). It is a sweet caviar that is distinguished by a very nice length in the mouth. It’s the finesse of its taste that makes it so famous.
A palette of buttery, hazelnut and fresh walnut flavors, finely combined with a color ranging from anthracite gray to light gray to golden brown.
The sweetness of the beans can be appreciated by rolling them on the palate to appreciate their mellowness and finesse.

Tasting: we advise you to open your tin 20 minutes before tasting the caviar, keeping it in a cool place. It can be served on blinis, with a little cream, or on slices of warm steamed potato topped with caviar and crème fraîche (see photo in our recipes section).
