Confit de canard des Landes (duck confit from the Landes) is made from half a duck: a wing, a leg and a breast.
Confit duck, from traditional ducks fed GMO-free grain corn and raised in the open air.
The preparation is done in the old fashioned way, with the most beautiful pieces of duck, of gastronomic quality.
Preparation:
Remove the pieces of your 1/2 duck confit from the jar and trim off the excess fat (you can store it in the fridge for other dishes). Place them skin-side down in a frying pan, toast lightly, then heat over a low heat, covered, for 5 to 7 minutes, turning occasionally, until the skin is crisp and golden-brown. You can also opt to bake in the oven at 150°C for 20 min, as long as you place the skin side up.
Save the fat for sautéing potatoes or vegetables.
