Duck confit gizzards from ducks fed GMO-free grain corn and traditionally raised outdoors.
Preparation: Before opening the tin, place in a bain-marie for 5 minutes to remove the fat from the gizzards. Take the gizzards out of their tin and remove the excess fat (you can keep it in the fridge for cooking other dishes). Place them in a frying pan and reheat for a few minutes over low heat in a little of their fat. Drain.
Tasting notes: Duck gizzards confit can be enjoyed in a Périgord salad (finely sliced and lightly pan-fried), or as an accompaniment to a dish of sautéed potatoes (with the fat), pasta or rice. They can also be used as a filling for quiches, omelettes and gratins.
