Whole duck foie gras from traditional ducks fed GMO-free grain corn and raised in the open air for a minimum of 103 days.
Preparation: Place the whole duck foie gras in the refrigerator a few hours before serving. Take it out 30 minutes before serving to reveal all its melt-in-the-mouth and its best flavours. Place pieces of about 1 cm thick on slices of bread.
Above all, avoid spreading it. Gently place on a slice of lightly toasted bread (farmhouse bread, rye bread, fancy bread, gingerbread, cereal bread, etc.).
Storage: Store away from heat and moisture. Never place duck foie gras in a jar in the freezer, as this may damage its texture and alter its aromas. After opening, keep in a cool place and consume quickly.
For a “sweet and sour” touch, serve it with Espelette pepper jelly or “Force Basque” Guérande Flower of salt!
